“Guisados” definition
Guisados (or stews in English) are traditional Mexican and international home-cooked dishes
that have remained favorites for decades—often even centuries. While rooted in tradition,
many of the preparation and cooking methods have evolved with the use of modern kitchen
tools and appliances such as blenders, mixers, and pressure cookers, commonly found in both
restaurant and home kitchens. Guisados typically involve multiple, specific steps and require
extended cooking times—ranging from 45 minutes to 2 or 3 hours, or even longer. While most
of the featured stews will originate from Mexico City, the menu will also include dishes from
other regions of Mexico and from around the world that share similar cooking techniques.
